Easy Cheesy Hashbrown Casserole Recipe – These cheesy potatoes, aka funeral potatoes, are a family favorite and the perfect side dish for everyday family dinners or for holiday meals. Make this easy crowd pleaser and you’ll have them coming back for more!

In our family, these are known as Uncle Joe’s Cheesy Potatoes and are everybody’s favorite. It’s a great recipe that pairs well with just about every meal, especially our Oven Baked BBQ Ribs.

Cheesy Hash Brown Casserole is a great side dish recipe made from simple ingredients. Thanks to a couple of short cuts, it takes just 15 minutes to throw together and can be ready to eat in about an hour.

Easier to make that traditional au gratin potatoes, because it’s made with hash brown potatoes, and cream of chicken soup. There are no potatoes to peel and prepare, and no cheese sauce to make.

  • frozen hash browns – You’ll find these in the freezer section of your local grocery store.

    Pro Tip – Be sure to thaw them on the kitchen counter for 30 minutes before you use them.

    Substitution Suggestion – This easy recipe works with all types of frozen or fresh potatoes, including sweet potatoes.
    Thicker cut potatoes will alter the cooking time. So, try to stick with a smaller diced or thinly sliced potato.

How to Make Cheesy Hashbrown Casserole

Pre-Heat Oven to 375°F.

  1. Mix Ingredients. Place all ingredients in a large bowl and mix to combine.
