How to Make Apple Muffins
- Preheat and Prep. Preheat oven to 350℉. Spray a muffin pan with nonstick spray or use paper liners.
- Soak and Drain Oats. Cover the oats with warm water and soak for 5 minutes, then drain them and set aside.

- Combine Dry Ingredients. In a large bowl, sift together almond flour, baking soda, cinnamon, salt, and ground nutmeg, and set the flour mixture aside.

- Combine Wet Ingredients. In a small bowl,whisk together the eggs, extra virgin olive oil, honey, and vanilla, until combined.

- Combine Dry and Wet Ingredients. Add the wet ingredients to the dry ingredients and mix well.
